Ice Cream Cherry Plum Pudding

Ingredients

 
   
1 lt Vanilla ice cream 100g hazelnuts
½ cup fruit mince 125g chocolate
125g scotch finger biscuits or similar 200g fresh cherries
1 tablespoon brandy  

Chocolate glaze

150g chocolate 60ml cream
Dash of brandy  

Method
 

Put ice cream in fridge till it has softened enough to stir, crush nuts, grate chocolate, crush biscuits, take seeds out of cherries and chop the cherries in 1/2. Add all the ingredients together and mix well. Pour into a glad wrap lined bowl and put into the freezer till frozen.
Remove from freezer and turn upside down on serving plate. Mix all the chocolate glaze ingredients together and pour over the top and place back in the freeze till ready to serve.
